Neapolitan Rice Krispie
The first time I saw a photo of Neapolitan Rice Krispie I knew I would have to make it one day. The gorgeous layers of strawberry, chocolate and vanilla. Rosa’s 5th Birthday Party was the perfect occasion to try some out. I searched the internet for a recipe and then modified it to suit our ‘kiwi ingredients.’ Here is my kiwi version. Surprisingly quick and easy. You only need one pot and make each layer in the same pot after you have poured it in the prepared tin. So easy and less mess.
Ingredients:
6 Cups of Rices
3 Cups of Cocoa Pops
5 1/2 Tbsp of butter
4 Cups of white marshmallows
2 Cups of pink marshmallows
1/4 packet of Strawberry Jelly Crystals
(I brought 3 packets of 180g Pascall Marshmallows. The 180g packet contains just under three cups of marshmallows but not even amounts of white and pink. Once you sort the white and pink marshmallow from your three packets there will be a few left over marshmallows.)
Directions:
Line a 9 x 9 cake tin or baking pan with baking paper.
Vanilla Layer:
Melt 1 and 3/4 Tbsp of butter in a large saucepan. Add 2 cups of white marshmallows. Stir constantly until melted. Remove from heat and quickly stir through 3 cups of Rices until well mixed and coated. Pour into the prepared tray and with clean damp hands press down firmly. Give your pot a quick clean and dry ready for your next layer.
Chocolate Layer:
Melt 1 and 3/4 Tbsp of butter in a large saucepan. Add 2 cups of white marshmallows. Stir constantly until melted. Remove from heat and quickly stir through 3 cups of Cocoa Pops until well mixed and coated. Pour into the prepared tray and with clean damp hands press down firmly. Give your pot a quick clean and dry ready for your next layer.
Strawberry Layer:
Melt 1 and 3/4 Tbsp of butter in a large saucepan. Add 2 cups of pink marshmallows. Stir constantly until melted. Remove from heat and stir through 1/4 packet of strawberry jelly crystals until they have dissolved. Add 3 cups of Rices and stir until well mixed and coated. Pour into the prepared tray and with clean damp hands press down firmly.
Pop in the fridge for about an hour to set before cutting. Enjoy!
